Now, to give you a little inspiration, here’re two great Turkey recipes:
Apple Juice Roast Turkey

Ingredients:
- 16lb Turkey
- 1 1/2 Gallons of Water
- 1 Gallon Apple Juice
- 1 1/2 Cups Salt
- 1 Cup White Sugar
- 1/4 Cup Extra Virgin Olive Oil
- 1/4 Teaspoon Dried Thyme
- 1/4 Teaspoon Poultry Seasoning
Directions:
- Rinse turkey inside and out with cold water; pat dry with paper towels.
- Mix water, apple juice, salt, and sugar in a large pot or 5-gallon food-grade bucket, stirring to dissolve salt and sugar. Submerge the turkey in the brine, cover the container, and place in refrigerator, 8 hours or overnight.
- Preheat oven to 325 degrees F (165 degrees C).
- Remove turkey from brine and discard used brine. Place turkey with breast side up into a roasting pan; pat turkey and cavity dry with paper towels. Loosen turkey skin over the breast and thighs with your fingers.
- Mix olive oil, thyme, and desired seasoning in a small bowl. Rub the seasoned oil over the turkey and underneath the loosened skin. Cover turkey loosely with aluminum foil.
- Roast in the preheated oven until an instant-read meat thermometer inserted into the thickest part of a thigh, not touching bone, reads 165 to 175 degrees F (75 to 80 degrees C), 4 to 4 1/2 hours. Remove foil tent about 45 minutes before end of roasting time to let the skin brown. Let turkey rest 30 to 45 minutes before carving.
Don’t know anyone with one of those bourgeois ovens? Make your turkey Taiwanese-style instead!
Taiwanese Turkey
Ingredients:
- 2lbs Turkey Pieces
- 1/2 Teaspoon Salt
- 1/2 Teaspoon White Pepper
- 1/4 cup Vegetable Oil
- 2 Shallots
- 1/2 Cup Water
- 1 Teaspoon Sugar
- 1 Teaspoon Soy Sauce
- Fresh Cilantro for Garnish
- Steamed Rice
Directions:
Rub the turkey with 1/4 teaspoons each of the salt and white pepper. Choose a large pot with a lid, such as a Dutch oven, and place a steamer rack inside. Fill the pot with 2 cups of water. Place the turkey on a dish that fits inside the pot and sits atop the steamer rack. (In order to save the turkey drippings, the turkey should not be placed directly on a rack with holes.) Bring water to a boil, then reduce to a simmer and cover the pot. Steam the turkey until its internal temperature close to the bone reaches 180 degrees, about 30 minutes. Let cool. Reserve the juices and drippings.
Once the turkey meat has cooled, pull the meat into bite-size shreds by hand and discard the bones and skin.
Heat the vegetable oil in a small pot over medium-high heat until shimmering. Add the sliced shallots and cook, stirring, until golden brown, about 3 minutes. Transfer immediately to a paper towel-lined plate. Reserve the cooking oil.
Combine the shallot cooking oil with 1/2 cup of the reserved juices and drippings from the steamed turkey. Add the water, sugar, soy sauce, and the remaining 1/4 teaspoons each of salt and white pepper. Add half of the fried shallots, saving the rest for garnish. Whisk mixture over medium heat to dissolve sugar. Bring to a gentle boil and simmer, uncovered until reduced by half, about 30 minutes. Strain sauce and discard solids.
To serve, scoop rice into individual serving bowls and top with a mound of the shredded turkey meat. Spoon the sauce over each bowl. Finish with the fried shallots and cilantro for garnish.
