We’ve been brewing ideas for fall desserts eversince the beginning of summer. The first thing that came to mind areautumn pears – which just happens to be a successor tothe summer lemon.
While in Wuhan, we came up with a series of desserts based on fruit. It turned out great, one might even say astonishing!
We wanted to try something different back in Shanghai and decided to make some tweaks and improvements on the summer lemon and autumn pear ideas.
The autumn pear dessert features a rich Western pear ganache and a seasonal local pear and juniper berry gel, which offers a refreshing and light taste. The light gel and smooth ganache combine tomake a great dessert that melts in the mouth.
The summer lemon features lemon ganache, lemon curd, lemon buttercream, finger lime pulp,and mint mojito gel. Whoa. While the finger lime pulp offers a great puckering experience in the mouth, the mint mojito gel expands upon and builds on the sour and refreshing taste of the lemon. The flavours resonate in the mouth, nostrils, and brain. If you’re a citrus fruit lover, you don’t want to miss this awesome dessert.

Autumn Pear
Matcha Napoleon is a classic dessert. If you’re a matcha fan, you’ll surely like this. This dessert features a fragrant puff pastry to balance the bitterness from the matcha along with the smooth quality of cream to reduce Matcha’s natural astringency.
